Researchers at Stellenbosch University’s South African Grape and Wine Research Institute recently conducted a study to explore wine aromas from the perspectives of South African, French and Portuguese consumers.

The research suggests that the ‘wine’ character that distinguishes wine from other beverages, and also allows consumers to identify a product as ‘wine’, is entirely due to the metabolic activity of yeast.
